Sugar Castle

Make pastillage (Recipe below).
Make royal icing (Recipe here).

Roll out pastillage and texture it.  Cut out 4 walls and cut out door and windows in two of the pieces.   Set aside to dry and remember to turn over after 6-12 hours.  Make sure pieces are completely dry before assembly.
Roll out pastillage and texture.  Cut out two notched turrets  3 inches long and two pointed turrets, 3 inches long.  Cut out top piece and cut out window.

To make balcony use large width notched turret cutter and cut about 1/2inches long.  Cut off triangles on either side.  Curve slightly, color and then attach with royal icing.

To color the castle old world style, I used the following Crystal Colors in the following order:
Forsythia
Dogwood Brown
Tree Bark
Chocolate
Charcoal
Slate
Brick
Crystallized Pearl Gold

Assembly:  Using royal icing, attach front castle wall to side, add back then other side.  Attach notched turrets to the front of castle and attach pointed turrets to the back.
Attach top window/balcony with royal icing.  Let royal icing set up and go back and dust with browns on royal icing.

Additional Castles:
Cut several walls and rectangles  with texture and let dry.  Attach with royal icing.  Cut layers and attached one on top of another.

Attach wall pieces to turret pieces to make whatever size you wish to have.
Always remember to make the front and back walls the same size.  Also, remember to make the two sides the same size as to make the castle fit to together.

Pastillage Recipe
NOTE: You can also use gumpaste, but Pastillage dries harder

4 cups powdered sugar (set aside 2/3 cup)
1 Tablespoon Sugarpaste gum mixture
¼ cup water

Grease bowl and paddle/beater.  On slow setting mix the powdered sugar and gum mixture.  Add water.
Mix on slow setting.  Grease work surface.

Put the 2/3 cup powdered sugar on work surface.  Grease hands with Crisco.  Put pastillage mixture onto sugar and knead well.

The pastillage can be used immediately.  However it will dry out faster than gumpaste so don’t use it for anything that takes a long time to make.
 
Wrap in plastic wrap and then place in large Ziploc bag.
