Banana Split Cake an idea from Wilton®

Supplies Needed:
   12 x 18 Sheet Cake Pan
   Glad Graduate Cake Topper
   Graduation Cap Icing Decorations
   Graduation Candles
   3 packages marble cake mix
1 package (3 oz.) strawberry flavored gelatin
   3/4 cup boiling water
1/2 cup cold water 1 package (4 serving size) vanilla instant pudding and pie mix
1 (9 oz.) tub frozen whipped topping, thawed
   1 1/2 cups cold milk
   4 bananas, sliced

Preheat oven to 325° F. Dissolve gelatin in boiling water. Stir in cold water; set aside at room temperature. Grease and flour pan. Prepare and bake cake 45-50 minutes. Cool cake in pan on rack for 10 minutes. Turn cake onto platter or foil covered cake board; cool an additional 10-15 minutes. Poke deep holes through top of cake with meat fork; space holes about 1 inch apart. With cup, slowly pour gelatin mixture over cooled cake. Set in refrigerator while preparing filling. For filling, mix instant pudding mix and cold milk in bowl; fold in whipped topping. Using large cake leveler, split cake into two horizontal layers. A cookie sheet makes a convenient large "spatula" for lifting and replacing the top layer. Spread filling on bottom layer, add banana slices and replace top layer. Ice cake with white buttercream icing. Add graduation pictures in four corners; make with wafer paper or frosting sheets. Mark scallop design using a toothpick, add tip 6 yellow icing. Add tip 8 bubble top & bottom border. Embellish bottom border with addition scallop shell border. Position Glad Grad Statue and icing caps around bottom border. Serves 45-50.

GRAD CAKE WITH SUGAR HAT & DIPLOMA
The links take you to needed products.
This book design works well for any graduate. Cut a quarter sheet cake in half (9x13") and stack it, so it looks like a closed book.
A half sheet cake also works if you need more servings. Ice one long side and the two short sides of the cake with white, icing
Use an icing comb on these sides to make it look like the pages of a book. Airbrush the combed icing gold. Ice the remaining side and top of the cake in the requested color. I chose to use red.
Use tip No. 8 and red icing to pipe the edges of the top cover and bottom border of the cake. Use the same tip and red icing to pipe details on the book's cover. Place a sugar diploma and cap #14285  on the center of the cake.
Use a cut parchment paper tube to pipe an appropriate message and overpipe the details on the hook.
To add more servings to the cake or another flavor surround it with cupcakes decorated with the graduation year and plastic picks.

Graduation scroll cake - jelly roll cake.
Do it 'their way' or simply use a box of cake mix. But for testing for doneness, press your finger lightly in the center. If the cake barely springs back up, it is done. Remove immediately. Follow directions below for the rest.
MATERIALS
• 2 eggs plus 1 egg white
 • 1 1/2 tsp. vanilla extract
 • 1 cup sugar
• 3/4 cup all-purpose flour
• 1 tsp. baking powder
• 1/4 tsp. salt
• Jelly
• 4 oz. cream cheese,  softened
• 3 tbsp. butter,softened
• 1 1/2 cups confectioners' sugar
• Decorator's gel
• Fruit leather

Step 1:
Heat the oven to 375 degrees. Line a 15- x 10-inch jelly roll pan with waxed paper and grease the paper well.

Step 2:
In a bowl, beat the eggs and egg white with an electric mixer on high speed for 5 minutes. Add 1 teaspoon of the vanilla extract, then gradually beat in the sugar at
low speed. Stir in the dry ingredients until well mixed.

Step 3:
Pour the batter into the pan and bake for 12 minutes, or until a toothpick inserted into the center comes out clean.

Step 4:
Invert the hot cake onto a clean towel sprinkled with confectioners' sugar; remove the waxed paper. Trim the cake edges with a sharp knife (adults only) and roll up the hot cake and towel from a narrow end. Let it cool on a wire rack.

Step 5:
Unroll the cooled cake, remove the towel, and spread on jelly, leaving a 2-inch strip at one end plain. Reroll the jelly-covered portion of the cake.

Step 6:
In a bowl, beat together the cream cheese, butter, confectioners' sugar, and the last 1/2 teaspoon of vanilla extract and use to frost the cake.

Step 7:
Use decorator's gel to pipe "roll lines" on the cake ends and the class year or your child's name onto the unrolled portion. Finally, add a fruit leather bow.
