Quilting

Quilting designs on the sides of cakes have been very popular for a number of years.
One quilting design can be suited for a number of occasions (re. engagement, wedding, bridal shower, etc.) just by changing the decorations at the joins. The old technique of achieving this look was cumbersome and extremely labour intensive as it involved using a ruler and a dress-makers wheel.
Geraldine Randlesome has made the technique as easy as 1, 2, 3.

Tools Required:

    * Diamond Marker for quilting
    * Plastic Scraper (#BS-100/CC#TSCRAP)
    * Freshly Coverd Cake or Styrofoam Dummy

Method:
1) On your freshly Sugar Paste (Rolled Fondant) covered cake or styrofoam dummy,
place a scraper on the top of the cake, this will help stop your fingers from indenting the top surface.

2) Take the desired quilting marker and place the marker at the desired starting point on the cake. Be sure that the bottom point or curve is touching on the cake board.

Gently push the marker in with even pressure, you may wish to slightly rock the marker from side to side to get full impression depending on the size of the cake. (See Figure 1)

3) If the top edge of the cake does not have a finished pattern when doing the steps outlined in (2), roll marker over top edge of cake to finish the pattern. (See figure 2)
Line the marker up again with the base of the marker on the cake board and the side joins then press into the sugar paste again.
Continue around the cake in the same manner until complete.

5) Once the cake has been quilted you can add embellishments to the joins.
Pipe a small amount of royal icing or melted chocolate onto the desired finishing pieces and then adhere to the joins.
