INSTRUCTIONS: Tint then roll out fondant or gumpaste thinly onto greased board. Press cutter into the paste and rub in a circular motion. Remove the decoration with a sharp tap. Cut out all required letters or decorations.

1. Roll out paste ± l mm thick.
2. Place cutters in a JEM Roller
Pad.
3. Place paste over cutters and
roll out again causing the letters to be cut out. Remove surplus paste.
4. Use a hat pin to remove lettering.
5. To keep the message in a straight
line, use a "marker" as a guide. A little water is sufficient to stick
the letters in position.

Ingredients
Egg White 35m1 31g I egg white
Sifted icing sugar 250m1 140g 1
cup
Tylose C 1000p 20ml 11g 2 rounded
tsp
Method:
Lightly beat the egg white. Add
sifted icing sugar slowly until soft peak consistency is reached. Add the
Tylose C 1000p. The mixture will immediately thicken. Gradually add more
icing sugar until a pliable texture is achieved. Rub a little Petal Base
or white vegetable fat onto your hands and work paste thoroughly. Paste
should not be sticky nor should it be too hard. Store in a sealed plastic
bag in a sealed plastic container. Paste is ready to use immediately.
HINT: The texture may be adjusted
by adding a little sugarpaste to the mixture

These cutters are designed to create fine, elegant letters and numbers, therefore for the best results it is essential to use a Flower Floral Paste. RECIPE HERE
Roll the paste out VERY FINE using cornflour (cornstarch) for dusting. The thickness should be as when used to make Sugar Flowers. This can be checked by simply placing the paste over these instructions and it should be possible to still see them. Ensure that the paste is not stuck to the board or work surface and moves freely, also that the top surface is not sticky.
Cut out a strip of paste using the oblong cutter, take care to press evenly around the edge and gently slide the cutter backwards and forwards before releasing. Turn the strip of paste so that it is Vertical. Choose the appropriate letter or number and position the cutter Horizontally across the paste (forming a cross). See picture overleaf.
To obtain the best cut, press firmly onto the back of the chosen letter / number, slide the cutter backwards and forwards and gently rock the cutter to release. If the letter or number remains in the cutter it can be removed by either, holding one end of the cutter and tapping the other end firmly on the work surface, or by using the FMM Scribing Tool to gently ease the paste out.
The cut out pieces can be positioned and attached immediately to a cake or decoration by securing with Gum Glue. (Gum Arabic and water in equal parts)
If the letters or numbers are allowed to dry they can be used either as free standing inscriptions etc. or attached as a prepared decoration with a little Royal Icing, softened Sugar Paste or Cream / Icing.
