CHOCOLATE: fill cavities with Chocolate, add 1/2 T. of Paramount Crystals to 1/2 lb melted chocolate to help keep the thin completed chocolate from breaking. Use Squeezit-Mold Painters #81-302 to keep from overfilling. Place filled mold in refrigerator until "just" cold. Carefully let candy fall from mold onto a soft surface. For a shimmering effect, brush pearl or luster dusts over the finished candy letters. If you have trouble with thin chocolate breaking insulate the outside of the mold with masking tape, etc. ROLLED FONDANT: Lightly spray mold with a cooking spray or dust with a dusting powder. Press crease-free kneaded fondant into mold. Remove excess fondant. Adhere to cake with icing or piping gel. |
