LOLLIPOP BOUQUETS


BASIC MOLDED CANDY
Now you’ll find out how easy and fun it is to use a candy mold. We’re starting out with the most basic candies—one color, solid body. But basic doesn’t mean boring. The details in each candy mold make these easy candies look terrific. So choose your favorite mold and some great Coating Chocolate—it’s time to start!

1. Melt. Choose one of these four melting methods.

2. Fill. Place melted candy in your mold using a spoon, Melting Bottle or disposable decorating bag. When mold is filled, lightly tap it several times on a counter to eliminate air bubbles in the candy.

3. Chill. Place the filled mold in the refrigerator or freezer until candy has set. When the underside of the candy mold appears to be frosted, you’re ready to unmold the candy. If there are any dark areas on the underside of the mold, it means some of the coating is still soft. In this case, chill the mold for a few more minutes, until the entire mold has a frosted appearance.

4. Unmold. Turn over the mold about an inch above a flat surface covered with parchment or waxed paper. Gently flex or tap the mold and out come the candies!


 
NUT CENTERS
The combination of a salty, crunchy nut surrounded by sweet, smooth candy is irresistible—and it’s also very easy to do. Use your favorites, such as almonds, pecans and macadamias and follow the simple steps below.

1. Fill each mold cavity half full with melted candy. Tap mold to eliminate air bubbles.

2. Place a nut in each coated cavity of the mold.

3. Fill remainder of cavity with more melted coating. Tap lightly on counter to remove air bubbles. Refrigerate candies until firm and unmold.


 
CREME CENTERS
How do they get those fancy creme centers into candy shop chocolates? It’s a snap—and you can do it too! Candy Creme Fillings make it easy, letting you squeeze the perfect amount of filling into your candy shell.

Use Candy Creme Centers.

1.Fill each mold cavity less than 1/2 full with melted candy. Using decorator brush, paint the coating onto the sides of each mold to the top edge. Coat mold so that no light can be seen through the shell. Place mold in refrigerator for a few minutes to harden candy shell.

2.Place Candy Creme Filling tube in warm water to soften. Dry tube thoroughly. Snip off end of tube. Squeeze tube from bottom to fill each shell with Candy Creme.

3.Add additional melted candy to seal top. Tap lightly. Refrigerate until firm.

LAYERED CANDY
The layered look is one of the most pleasing ways to mold candy—and one of the easiest. A great idea for holiday candies: red, green and white for Christmas, lavender, yellow and white for Easter, orange, yellow and chocolate for Halloween.

1. Fill molds to desired height with melted Coating Chocolate in one color—this will be the color for the top of the candy. Tap gently on counter. Refrigerate until firm.

2. Add contrasting color melted candy to desired height. Once again, tap and refrigerate until firm.

3. Repeatuntil desired number of layers are formed. Unmold.


 
MARBLEIZING CANDY
Add some richness to your boxed assortments by including some luxurious swirled colors.

1. Separately melt two different colors of Coating Chocolate

2. Stir colors together, using a lollipop stick to draw lines in mixture. Do not overmix.

3. Quickly spoon or place into molds, while mixture is still soft. Tap. Refrigerate until firm; unmold.


 
PAINTING DETAILS
Adding color details to candies makes them more realistic and much more fun! For large areas of color, it’s best to paint the melted candy right in the mold before the whole candy is molded using a decorator brush. Or, for very small details like vines, mouths and messages, melted candy should be piped onto molded candies using a parchment bag with a small hole cut in the tip.

1. Melt desired Coating Chocolate colors in the microwave, using the Candy Melting Plate. With decorator brush, paint areas of candy molds with melted candy.

2. Refrigerate mold a few seconds until candy is firm, repeating for each additional color.

3. Fill mold to top with melted candy, tap, refrigerate until firm and unmold. For best results, always fill in one section of the mold at a time and let set before adding additional colors.


 

Piping Details
Piping is the way you can add designs or details by controlled squeezing of melted candy, icing, etc., from a decorating bag. Just squeeze from the bag onto your molded candy. It’s easy to add hair, facial features, clothes or other designs to candy. When using parchment bags: Follow Parchment Triangles package instructions to prepare one bag for each color. Melt the candy separately before placing in parchment bags, then spoon it into bags. Using scissors, cut a small opening in tip and squeeze candy on molded candy. You can also reheat candy if it hardens in the bag by placing the bag back in the microwave or on a warming tray.

 
LOLLIPOPS
There’s no trick to molding candy on a stick! Most Wilton candy molds are made with indentations to fit our lollipop sticks, so it’s easy to make and give these great candy treats. Lollipops are fun to decorate for the occasion, with simple ribbon and wraps.

1. Pour melted candy into lollipop mold. Tap mold to remove air bubbles.

2. Position sticks in mold. Rotate sticks to thoroughly cover with candy so that they remain securely in place. 

3. Refrigerate until firm, remove lollipops by raising the stick and lifting candy out of mold.

LOLLIPOP BOUQUETS
Looking for a fabulous way to say "Get Well", "Happy Birthday" or "I Love You"? These wonderful bouquets are so easy to make, using a coffee mug, flower pot or gift container and your homemade lollipops. They’re even more appreciated, because you make them yourself.

1. Using a craft knife, cut a piece of foam craft block to fit your choice of container and place inside. Or, wrap a rectangle of craft block in Fanci-Foil Wrap to use as a base for your blossom.

2. Insert your lollipops into the craft block, arranging in desired positions.

3. Decorate around lollipops with tissue, colored plastic wrap, curling ribbon, balloons, gift cards, etc.
