Carousel Horse Cake
Give
a youngster (and her guests!) the ride of her life. Prettily ice a pair
of Oval Pan Set cakes to fashion a fancy foundation for a candy-plaque
horse shaped in our Rocking Horse Pan.
Instructions:
Step 1
One day in advance, make rocking
horse candy plaque. Using aluminum foil, make a barrier to prevent melted
candy from seeping into rocker area of pan. Pour 12 oz. melted candy into
prepared pan and refrigerate until set. Trim edges as necessary. Using
royal icing, make 89 tip 102 violet rose with tip 6 centers, completing
just row 1 and 2. Make 40 tip 104 full roses with tip 12 centers. Make
extras to allow for breakage and let dry. Using royal icing, decorate candy
plaque. Pipe tip 3 string eyes and mouth; tip 3 dot nose. Pipe tip 5 bridle,
hoofs and saddle; pat smooth with finger dipped in cornstarch. Add tip
5 number, tip 18 string hair. Make a rosette ring: on waxed paper, pipe
tip 18 rosette. Dip end of plastic dowel rod in cornstarch and into enter
of rosette. Remove rod and clear icing from center. Let rosette ring dry.
Cut a 20 in. length of curling ribbon and wrap it around a plastic dowel
rod, securing ends with transparent tape.
Step 2
Bake 3 in. high oval layers and
prepare for stacked construction. Using tip 5, pipe message on top tier.
From either side of message, mark cake into equal 3 in. sections using
garland marker, positioning bottom of garland 1 3/4 in. from bottom edge
of cake. Repeat for bottom tier, dividing into 12ths. Pipe tip 16 zigzag
garlands at marks. Add small roses to garland points. Pipe tip 5 bead bottom
borders Position large roses at bottom border of large tier; add tip 352
leaves. Position small roses at bottom border of small tier.
Step 3
Attach candy plaque to plastic dowel
rod using reserved 2 oz. melted candy, allowing 5 1/2 in. to extend at
bottom. Let set. Insert a sharpened wooden dowel rod through cakes and
cake board down to base board. Position rosette ring in center of hole.
Thread candy plaque on dowel rod over wooden rod and through rosette ring.
Plastic dowel rod will rest on cake board of small cake. Attach gumball
to top of plastic dowel rod with royal icing. Attach small roses to cover
gumball.
Celebrate One Year Cake
Pull
out all the stops and hit all the exciting spots‹for this colorful first
birthday cake. The top cake, made in our #1 Pan, is stacked on two Long
Loaf cakes for the big impact the day deserves. Trimmed with fondant flames
and garlands of colorful dots.
Instructions:
Step 1
In advance: Make fondant flames.
Tint two 1 1/2 in. balls of fondant each yellow and orange; roll out 1/8
in. thick. Cut yellow flame using large leaf and orange flame using medium
leaf Cut-Out. Attach orange flame to yellow flame with damp brush. Let
dry on cornstarch-dusted board.
Step 2
Bake and cool two loaf cakes and
#1 cake. Trim front side of #1 cake to fit flush against loaf cake. Trim
loaf cakes to 2 in. high. Cut one loaf to 12 in. long; cut the 4 in. section
in half and position on full-size loaf for an 18 in. long cake. Ice cakes
smooth. Roll out white fondant 1/8 in. thick. Using medium round Cut-Out,
cut 25 circles and attach to loaf cakes in garland formation. Tint 2 oz.
portions of fondant each rose, violet, blue, orange; roll out 1/8 in. thick.
Cut 6 violet, pink and blue circles and 7 orange circles using small round
Cut-Out. Attach small to medium circles with damp brush. Cut name using
alphabet Cut-Outs; position on cake.
Step 3
Position cakes. Pipe tip 21 shell
borders on loaves. Pipe tip 7 top and bottom bead borders on #1 cake; edge
white number with tip 4 beads. Attach flame to cookie stick wick with thinned
fondant adhesive. Insert stick in cake, leaving 4 in. extended.

It’s
always a party when a balloon-holding Dinosaur Pan cake shows up. Turn
Ball Pan cakes into colorful balloons using piped icing stars and curling
ribbons.
Farm Fresh Fun Cake
Our
barn birthday cake features four farm friends looking out the windows and
saying Hay!” to one and all. Use the Hexagon and Sheet Pans to build the
barn and Mini Balls for each animal.
Instructions:
Step 1
In advance: Make chick's wings and
hair tuft, horse's ears in royal icing on waxed paper covered board. With
tip 16, pipe zigzag wings, 1 1/2 x 3/4 in. wide, and pull-out hair tuft.
Pipe tip 366 pull-out ears, 1 1/2 x 3/4 in. wide. Let dry.
Step 2
Bake and cool 1-layer 15 in. hexagon
and sheet cakes and 4 mini ball cakes. Cut hexagon horizontally in half
and position on foil-wrapped board against top edge of sheet cake. Ice
cakes smooth. Mark door and windows with toothpick: Door is 4 3/4 x 3 1/2
in. wide, side windows are 4 3/4 x 3 1/2 in. wide, top window is 3 3/4
in. square. Ice window areas smooth. Pipe tip 2B band boards. Use smooth
side of tip 47 to pipe band trim on windows and door. Edge barn with tip
2B bands. Position 4 mini ball cakes on foil-wrapped boards. For horse:
Extend nose 1 in. using fondant; attach to cake with buttercream icing.
Ice nose smooth. Pipe tip 3 dot eyes and pupils (smooth with finger dipped
in cornstarch). Outline diamond on nose with tip 3; fill in with tip 16
stars. Cover head with tip 16 stars. Insert ears. Pipe tip 16 pull-out
mane, tip 3 outline mouth and pipe-in nostrils (smooth with finger dipped
in cornstarch). For cow: Trim 1/2 in. off top of head. Using tip 4 pipe
in nose, pipe dot eyes and pupils (smooth with finger dipped in cornstarch.
Using tip 3, outline eyebrows and mouth, outline and pipe in spot around
eye. Pipe tip 12 pull-out ears; pat smooth to indent center. Using tip
16 cover face with stars and pipe pull-out hair. For pig: Pipe tip 3 dot
eyes and pupils (smooth with finger dipped in cornstarch). Cover face with
tip 16 stars, overpipe snout for dimension. Using tip 3, outline mouth
and eyebrows, pipe in nostrils (smooth). Pipe tip tip 366 pull-out ears.
For chick: Trim cake 3/4 in. high. Outline and pipe in beak with tip 4.
Pipe tip 3 dot eyes, outline eyebrows and smile lines. Print tip 3 message.
Step 3
Position animals on cake. Pipe tip
233 pull-out hay. Attach wings and hair tuft to chick with tip 3 dots of
icing.

New Kid on the Blocks Cake
He’s
king of the hill for his special first birthday! And why not? It’s been
a year of so many “firsts” for this little one. Have fun creating baby
and bear with our Ready-To-Use Rolled Fondant. Make bright blocks using
layered 6 in. square cakes.
Instructions:
Step 1
One day in advance: Make fondant
baby, hat, bear and train cars. Tint fondant as follows: 6 1/2 oz. dark
brown, 1 oz. light brown, 2 oz. blue, 1/2 oz. black, 1 oz. violet, 3 oz.
orange, 2 oz. green, 8 oz. copper. For baby, use two 2 1/2 in. globes;
tape one end of one globe closed for head. Roll out copper 1/8 in. thick;
cover both globes, leaving bottom end of head and both ends of body open.
Cover bottom half of body with white for diaper, top half with green for
shirt. For arms, roll 2 copper logs, 1 1/2 x 3/8 in.; flatten one end and
cut slits for fingers. Attach with fondant adhesive. Make copper feet 1
3/4 x 1 in. wide; attach 1/4 to 3/8 in. ball toes. Cut black eyes with
narrow end of tip 8; attach. For mouth, roll out black 1/8 in. thick; cut
circle with wide end of any tip, then move up to cut crescent mouth and
attach. Roll out green and cut 1/4 in. wide strips for sleeves; attach.
Roll small copper ball for nose; attach. In copper, cut tip 2A cheeks and
ears; cut ear circle in half and attach. For hat, roll a 1 1/2 in. blue
ball; shape into a cone. For fringe, cut a 1/2 x 3 in. long white strip;
cut slits 1/8 in. apart and attach. For number, roll a small white log;
cut sections. Print name with tip 1 and buttercream.
Step 2
To make bear: Roll a 2 in. x 1 3/4
in. dark brown oval body, a 1 1/2 in. ball head, 1 1/4 in. x 1/2 in. logs
for arms and 1 1/2 in. x 3/4 in. logs for legs; attach with fondant adhesive.
Shape 1/2 in. dark brown ears; flatten small brown balls for inside ears,
muzzle and pads of feet. Roll out light brown 1/16 in. thick and cut 1
1/2 in. oval for belly; attach. Pipe tip 2 dot eyes and outline mouth in
buttercream. For train engine, press orange fondant into train candy mold;
unmold. For other cars, roll out orange, blue and violet fondant 1/2 in.
thick; cut 1 in. x 1 1/2 in. rectangles. Cut contrasting color wheels with
wide end of tip 2A. Pipe tip 2 trim.
Step 3
Bake and cool 3-layer cakes (you
will need two 2 in. and one 1 in. layer for each 5 in. high cake). Stack
cakes; place 2 cakes on 7 in. square foil-wrapped boards, 1 cake on board
cut to fit and 1 cake on 12 in. foil-wrapped cake circle. Prepare all cakes
except one on 7 in. square for stacked construction. Pipe tip 16 star letters
and borders on sides, 3/4 in. wide. Pipe tip 3 outline tracks.
Step 4
At party: Assemble A-B-Y cakes.
Insert 9 in. dowel rod in B cake; position baby over dowel rod. Position
bear, train and train cars.

and teddy just go together! What better friend to invite to that all-important
first birthday? Combine the Animal Crackers, Mini Wonder Mold and Oval
Pans to make him come to life.
The Greatest Ring Master on Earth
Cake
Instructions:
Step 1
Using Roll Out Cookie dough and
patterns cut out Top Hat, Hat Brim, 2 hands (reverse one) and 2 shoes (reverse
one). Bake all and cool. Attach hands to lollipop sticks with melted candy.
Place hands on cooling grid over drip pan and cover with white cookie icing.
Let set.
Step 2
Bake and cool 1 layer oval and bear
cake. Trim ears and muzzle off bear cake. Cut oval in half lengthwise and
stand on cut ends. Ice smooth. On edge of ovals, mark triangles 4 1/2 in.
wide beginning at the middle. The triangles on the ends will only measure
half (2 1/4 in.). Cover triangles with tip 16 stars.
Step 3
Arrange cakes as shown.
Step 4
Decorate Ring Master: Ice one side
of hat brim smooth; set aside. Using a toothpick, mark jacket, shirt, cummerbund
and collar. Ice shirt smooth. Using tip 5, pipe cummerbund, pat smooth
with finger dipped in cornstarch. Using tip 3, outline collar and jacket.
Fill in jacket, collar, cuffs and pants with tip 16 stars. Using tip 5,
pipe string moustache, dot eyes, hair, string mouth and ears. Using tip
3, build up nose. Cover face with tip 16 stars; overpipe moustache, mouth
and eyes. Position hat brim. Cover top half of brim with tip 16 stars.
Outline top hat and fill in with tip 16 stars. Position shoes and cover
with tip 16 stars. Using tip 3, pipe bow tie and dot buttons over outline
of collar; overpipe. Insert hands into cake.
