What an exciting way to introduce a friend or relative to the wonderful world of cake decorating.

Jack-In-The-Box Cake

 Instructions:
Step 1
To make clown: spray inside of clown pan with vegetable oil. Roll out gingerbread dough on lightly floured surface to 3/8 in. thickness. Transfer dough to inside of pan; press into indentations. Smooth edges, (dough should not be up the sides); pierce with a fork. Bake 17 to 20 minutes or until edges begin to pull away from sides. Turn out onto a rack to cool.
Step 2
Out of dough, also cut 2 back braces and four 4 1/4 in. hearts. Bake and cool.
Step 3
Use royal icing to decorate gingerbread. For clown plaque: with a pin, scratch collar pattern guidelines. Outline hat, face and collar with tip 3 strings. Pipe in eyes, face and tongue (smooth with finger dipped in cornstarch).
Step 4
Cover hat, face and collar with tip 16 stars. Add tip 3 outline lashes. Add candy trims. Let dry. Generously ice straight sides of back braces and push onto back of clown. Ice hearts smooth and let dry.
Step 5
For box: Cut a 10 in. square from cake board and cover with fanci-foil wrap for lid. Ice 4-layer square cake smooth. Push in dowel rods. Put separator plate on top.
Step 6
On cake sides: Push heart cookies into icing. Print tip 3 message on front heart. Pipe tip 16 pairs of scrolls above hearts. Trim corners with tip 16 C-motion. Add tip 16 rosettes and stars. Edge hearts with tip 16 C-motion.
Step 7
On cake top (around plate, too) and sides, pipe tip 16 shells. Edge base with tip 21 shell border.
Step 8
Push lollipop stocks into the back edge of cake top so box lid will rest on them. Position box lid. Place clown on plate. Pipe tip 21 spiral "candleholder" and push in candle.



Ruffles 'N Roses Cake

Instructions:
Step 1
With stiffened buttercream (or royal icing) make 2 two-tone roses using tips 12 and 104.
Step 2
Ice 2-layer cake smooth. Imprint message using Italic Make-Any-Message Press Set. Outline message with tip 2, adding decorative build-up on some letters.
Step 3
Edge cake top with tip 104 double ruffle. Trim center seam with tip 14 shells. At base, pipe tip 14 shells (to add dimension). Overpipe shells with shells with tip 104 ruffle. Trim edge of ruffle with tip 14 shells.
Step 4
Pipe tip 2 vines. Add tip 104 half roses and rosebuds. Trim with tip 2 calyxes and sepals. Position roses. Pipe tip 66 leaves.

Congratulations All Around Cake
Wish graduates good luck with a horseshoe-shaped cake. Coat it with chocolate ganache made with our Light Cocoa Candy Melts and top with candy letters molded with the Alphabet & Numbers Cut-Outs Set.
Instructions:
Step 1
Divide melted white candy into four portions. Tint candy blue, red, yellow and orange. Place alphabet cutters on waxed paper and fill halfway with melted candy. Freeze for 10 minutes to set; unmold.
Step 2
Ice cake smooth; let set. Make ganache recipe using Lt. Cocoa Candy Melts. Place cake on wire rack over drip pan and cover with ganache glaze. When set, transfer cake to platter. Position candy letters.
Step 3
Place Lt. Cocoa Candy Melts wafers on waxed paper. Using melted candy in cut disposable bag, pipe over each wafer in a zigzag motion. When set, position wafers at bottom border and cake topper in center of horseshoe.
