RED ICING QUESTION:

I know this question was posted a month or so ago, but unfortunately I don't have time to look through the posts, so if you all could be so kind as to post your best ways to get red icing.
I have to do a fire truck for this weekend, so I need it to be really red. I have already made up a batch of Marida's icing and started with pink (I heard that somewhere); then added Wilton's Red-Red (quite a bit) and now I'm letting it rest to see what the true color will be, but when I looked it was still pretty pale and more pinkish then red. If I can't this red-red, then i will end up buying the Wilton tubes of Red, but I really don't want to do that as squeezing those plastic skinny tubes is torture on my hands.

Wilton red red can have a bitter aftertaste if you use too much and I don't like the color it makes. I use Wilton red no-taste. You can dump a whole bottle in and it still tastes good. I mix it to a nice light red - just enough so it doesn't look pink. Then let it rest an hour or so to darken. It will darken a little more yet when on the cake. Good luck with your truck.

Kathyf is right...na-taste red is good, but an air gun is even better...less trouble! Do you have one? If you do, sometimes getting a dark color like red is easier and less messy that way. ;o)Lori
I have always had great luck with the gel paste colors, more readily available as gel these days. But the colors go a LONG way,,just takes a drop to make pastels, and about 10 drops to make dark colors, and it don't taste bad either. And you can get a true red color, from the gel color called

Bakers Preferred. Dolores carries this brand. I bought some after I kept reading about her endorsing it for making really red icing and found that it really does make the best, deepest red with the least amount of food coloring. This is really a great product. You don't have to use much of it to get a good, deep red so the aftertaste from the food coloring isn't really noticeable.
